Strawberry Couscous Pie

Ingredients

    Crust:
  • ¾ cup couscous
  • 1 cup apple juice
  • pinch salt
  • Topping:
  • 2 cups apple juice
  • pinch salt
  • 11/2 tsp agar agar
  • 1 punnet strawberries

Instructions

    Crust:
  1. Steam couscous for 5 minutes
  2. Place in bowl and fluff up with a fork
  3. Bring juice to the boil and simmer for 1-2 minutes
  4. Add to couscous and then place in shallow baking dish
  5. Press down to firm.
  6. Topping:
  7. In a saucepan mix together the juice, salt and bring to almost the boil
  8. Add the agar agar, reduce the heat, stir in and allow to simmer for 2-3 minutes
  9. Allow to cool a little
  10. Place halved berries on top of couscous
  11. Pour over juice and refrigerate to set
